Watching: not a damn thing24 April 2005 Sometimes I wonder why I keep this page going...I only update every few months...if that. Anyway, let's get up to date here. Nate and I celebrated our first year together on Valentine's Day (we picked that day because we knew we started dating in February but we couldn't remember the exact date that we decided we were going to be a couple.) Then, my sister gave birth to a healthy, beautiful baby girl on the 1st of March and named her Nova Rae (after an exploding star and a ray of sunshine. If anyone tells you it was because she was conceived in the back of a car and her daddy's name is Ray, that's a crock o' shit...unless they're talking about someone with the same name from down home Tennessee, in which case, that might be true.) I haven't started school yet although I am enrolled and I do have my Financial Aid. Nothing really exciting has happened, yet, though. There's only a week until my birthday. Have I mentioned that I love birthdays? I really do. Not just mine, either. Mine is the most important since I don't have to expend any funds or a whole lot of effort to make it nice. I am going all out for Nate's birthday, though. His is 5 days after mine. That is going to be a packed week. Wednesday of that week is Brew Night at the Ale House, then Thursday is Cinco de Mayo, and Friday is Nate's birthday. For his birthday we're having a Cinco de Mayo Hangover theme party. So the night before, we're having a "decorating" party to basically just make the place look like we had a wild ass party the night before his birthday. He and I are taking his birthday off from work and I'm not sure what we'll do but, it'll be fun. We're making Fish Tacos, but we aren't going to use fish sticks. Most of the recipes I found online called for fishsticks but that just sounds gross. The Spanish teacher at the daycare I work in told me that I could use fish sticks or just ground up some fresh fish meat after we strip it off the bones and mix it with ancho sauce. MMMM...sounds good. Speaking of fish, Nate and I went to the ocean yesterday and brought back some fresh crabs...mmm...they were delicious. One of them (probably the one that I picked out) just WOULD NOT DIE! We had him at the bottom of the ice chest for 2 hours packed tightly in ice, so when we pulled him out, he was frozen and dormant but he was just starting to wake up a little. We put him in the pot to boil and the damn thing was swimming around in the boiling hot water! Nate thought the bubbles from the water were pushing him around and that he was dead, so he pulls him out and puts him in the dish we had the other two in, and when he started to pull him out to gut him, he realized he wasn't dead. I'd tried to tell him but he told me, "Oh no, he's dead for sure." So he listened to me when he almost got his fingers pinched and we had to put him in for about another 5 minutes before he finally cooked to death. He was a feisty little bugger...just like I knew he'd be. He was delicious, too. Meaty...went well with butter and garlic. LOL I'd never had fresh crab before so that was an experience. Speaking of, we still have some left and I need to buy some won ton wraps so we can make crab rangoon...mmmm crab rangoon. I also learned an interesting fact...calamari only has like 15-20 calories per serving (minus the aioeli sauce.) I love calamari. Funny how I like all this seafood now and when I was kid I absolutely hated anything that wasn't hot dogs, mac n cheese, or peanut butter and jelly. Now, I hate peanut butter and jelly, as well as hot dogs. Mac n cheese will always be a favorite...especially made from scratch. Mmmm...I must be getting hungry. I keep talking about food. Oh! We also have spot prawns...those should be tasty. Can't wait. Anyway, I should go wake up Nate. Naptime is about over with. LOL Adios! Amber :)
